how we work
At Argeles, every wine begins with close observation of the vineyard.
Each grape variety on the estate is cultivated across several distinct micro-plots, defined by subtle differences in slope, soil depth, exposure, altitude, and vine age. These differences matter — and they are never averaged out.
Micro-plots
& Vinifications
Every micro-plot is harvested separately, vinified independently and evaluated on its own terms.
Even within the same grape variety, neighbouring plots may produce profoundly different expressions. Fermentations are carried out in small lots, preserving identity before any blending decisions are considered.
Barrels
& Selection
All wines are aged in high-quality barrels, selected individually through tasting to best support the character of each lot. Barrels vary by format and size, grain tightness, forest origin toast level and aromatic profile. There is no standard barrel at Argeles — oak accompanies the wine, it never dominates.
Tasting
& Final Selection
After alcoholic fermentation and during malolactic fermentation, wines are tasted continuously. Once the direction of each lot becomes clear, decisions are made about which barrels best support the wine’s natural character.
After ageing:
some lots are bottled as Single-Varietal wines
others contribute to Àrdua, the estate’s panoramic expression
the most complete wines are selected for Argeles
After ageing, each lot finds its place according to its balance, complexity, and ageing potential. Decisions are never made in advance; they emerge through tasting, selection, and restraint.
